In this video, Betty demonstrates how to make Healthy and Natural Granola Bars. These granola bars have oats, nuts, brown sugar, honey, melted butter, and a sprinkling of salt–all natural ingredients–no additives that you find in commercial cereal bars. Betty also gives her philosophy of eating healthy foods.
Ingredients:
4 cups quick or old fashioned oats, uncooked
1 cup chopped nuts (I used 1/3 cup sliced almonds, 1/3 cup chopped pecans, and 1/3 cup English walnuts.)
1 cup firmly packed brown sugar
2/3 cup butter or margarine, melted
1/3 cup light corn syrup (You may use honey.)
1/2 teaspoon salt
cooking oil spray
Combine all ingredients in a large bowl, and mix well. Press into a 15 1/4-inch by 10 1/2-inch jelly roll pan that has been sprayed with cooking oil. Bake at 450 degrees for 8 to 10 minutes. (Mixture will be brown and bubbly. I cooked my granola bars 10 minutes in this demonstration, but they were a little over-brown; 8 minutes would have been better.) Cool. Cut into bars and serve on a serving plate or store in a sealed container for up to 2 weeks. They stay fresh for a very long time! These granola bars contain *only* healthy ingredients and are a great choice over a candy bar, which generally has no nutritional value! They taste great, also! Our Healthy Kids Project (HKP) here at ACCESS aims to promote healthier lifestyles for children, ages 5-10 years old, and their parents through active learning about physical activity, nutrition, environmental health and mental health. The goal of HKP is to try to help make living a healthy life fun and easy while engaging not only children but parents. This is the perfect opportunity for families to learn how daily behaviors impact personal health now and their influence on future health. It is possible to make a large impact by just a small change. Group sessions include height, weight, and blood pressure screening for children, health screenings and referrals, food preparation techniques, how to read nutrition labels, physical activity opportunities, safer household cleansers and a fieldtrip for families who attend regularly.

— Cabbage
— Zucchini
— Cilantro
— Corn on the cob
— Cherry Tomatoes
— Hot Pepper
— Lime
— Orange
* P r e p a r a t i o n *
— 1) Using your food processor’s shredder blade, shred cabbage, zucchini, cilantro in food processor; transfer to serving platter
— 2) Slice corn off of cob(s); transfer to serving platter
— 3) Replace shredder blade with S-blade
— 4) Place cherry tomatoes & hot pepper into food processor
— 5) Squeeze juice of lime and orange into food processor as well
— 6) Blend until desired consistency
— 7) Pour over top of salad
—
Do anything further that you want! You could add some sea salt, garnish with avocados, or just follow your own intuition!

Working with the tools already in the kitchen, Laura prepares her first ever raw foods cheesecake.
Any berry or fruit is ideal for making a glaze topping in this dessert. Use your taste preferences and experiment. The tartness of the berries seemed to compliment the richness of the cheesecake very well and was the family favorite.
~Since adapting the raw food lifestyle 4 months ago, Laura has released 29 pounds. Currently she is 90% raw and still in transition. A medical diagnosis of severe anemia and leukemia prompted the change from a vegetarian diet to a raw food vegan lifestyle. Laura has experienced immense improvement in lab/blood tests as well as in her energy and overall health since switching to raw foods. UPDATE: The anemia is now reversed and cured!!!~

Veggie Dip Recipe *

? 3 Ingredient Vegetable Dip Recipe ?
* I n g r e d i e n t s *
— 10-12 cobs of corn
— 2 limes
— 2 large zucchinis (one green, one yellow, if possible)
— OPTIONAL: avocado, hot pepper and/or sea salt (add these ONLY if you really need them)
* P r e p a r a t i o n *
— 1) Using a bread knife slice the corn off of the cobs, and transfer to a food processor.
— 2) Using a citrus hand juicer squeeze lime juice over corn, and also add any of the optional ingredients, if necessary.
— 3) Blend in food processor until the consistency of a dip, and then transfer mixture to a serving bowl.
— 4) Slice zucchinis into bite-sized rounds.
— 5) Serve with dip, and enjoy!
* I n s p i r a t i o n *
— Enjoy the simplicity of whole, raw foods!
— Leave out the isolated foods, that have been chemically altered with heat, or the extraction of water.*(see clarification below)
— Eat the food that grows off the trees, or out of the ground.
— Each fruit and vegetable is a perfectly balanced piece of nature.
— Nature doesn’t isolate. Nature is whole and pure. She knows what she’s doing! She is infinitely intelligent, and already had it all figured out for us! Have faith in her infinite wisdom.
— It is NOT about eating 100% raw. It is about eating 100% HEALTHY.
— It is unfortunately today possible to be 100% raw, but totally unhealthy…for example, if you are basing your diet on heavy raw foods such as nuts, pâtés, dehydrated crackers and other dehydrated foods, raw vegan ice creams and other dessert treats.
*I know what some of you may be thinking…if he’s saying to not alter the food before we eat it, why on earth is he using a food processor? The answer is that what I mean by altering ones food, I mean altering it *biochemically* on the *molecular* level via heat (which for example denatures protein molecules, leading to a disruption of the molecular conformations themselves). I also feel that altering foods by dehydrating them, too drastically changes the way that nature intended for us to enjoy these foods. Our bodies are almost all water, so clearly, water is important to us. If the fruit or vegetable came with water in it, it should stay with it! Otherwise, our bodies would have to retrieve the same amount of missing water from our very own bodies in order to digest the dehydrated food properly. In my opinion, dehydrated foods literally dehydrate you. So please have them in moderation, and always with a glass of water…but do not make that a habit, as whole fruits and vegetables are always best!
