My 9 year olds homework on healthy eating……..?
Requires her to find a healthy recipe from anywhere around the world which is nutritious, high in fibre and low in fat and sodium. It needs to be a simple recipe that can be made at school but something the children will eat…………I am at a complete loss and need some help from you lovely lot!

My little sister used to watch a programme on BBC cbeebies called ”big cook, little cook”, they make lots of healthy snacks but aim them towards kids, making the food shaped like something interesting but it’s also really simple to make and fun for the kids.

The recipes are split into categories such as sweet, savoury and fruit but there is also loads of recipes to choose from, so you might find something on there to use.

Avoid GM food at all costs. Plenty of vegetables, some meat and preferably some Yorkshire puddings. You cannot beat it. (Well, you have to beat the pudding mixture)

Roast Vegetable Pizza.
2 Open Cap Mushrooms
1 Courgette
1 Red and yellow pepper
1 Small onion
2 Garlic Cloves
Fry Light
142 ml Passata
113g pizza base mix
Thickly slice mushrooms and courgette, de-seed and roughly chop peppers, slice the onion, finely chop tomatoes and crush the garlic.
Preheat the oven to gas mark 6. Place mushrooms, courgette, onion and peppers on a baking sheet, spray with fry light and roast for 25 mins.
Place tomatoes, garlic and passata in saucepan and slowly bring to the boil and simmer for 20 mins until thickened and allow to cool.
Add 5 tablespoons of warm water to pizza base mix and knead for 5 mins. Place in a bowl cover and leave for 25 mins until it doubles in size. Knead on floured surface and roll out to approx 32cm x 25 cm and place on baking sheet.
Spread the tomato sauce over the base, arrange the vegetables on top, spray with fry light and bake for 10 mins until the base is cooked.

I’ve just realised it’s something that can made at school!
The burgers would be fun and simple.
1 440 g can chickpeas; drained and pureed
1/2 medium onion; grated
1 medium carrot; grated
1 tablespoon tomato puree
2 teaspoons ground cumin
1 teaspoon ground coriander
3 tablespoons oatmeal
Bind above in bowl, shape and cook gently in oil in pan. turn.
flour to coat
2 tsp oil

How about a trail mix. Cereal, nuts, raisins, and then something sweet for a nice mix (m&ms, Chocolate chips, marshmellows). I have done this with lots of different things, I usually let my kids help me pick what to put in it.

Sun flower seeds
Banana chips

I agree with Cheffy. For a 9 year old the dish needs to be simple.
When kiddoo gets older, look at Punjabi vegetarian cuisine - healthy, very tasty, and quite easy to prepare and cook in a domestic kitchen.
