My favourite is the cheese-free stuffed shells (I use cannelloni shells) on vegetariantimes.com. Oodles of good ingredients and it all goes into a food processor. Too easy. I use the oven-ready noodles and squeeze the mixture into the tubes with a ziploc bag. There is also a student vegetarian cookbook (easy and cheap ingredients) available at most Chapters/Indigos.

Vegetarian Pasta w/ lots of vegetables! I’m not sure how impaired you are, but its easy.
Cook pasta as usual, if you haven’t its very easy. Bring enough water to boil that will cover the pasta. Add a pinch of salt when boiling, you will see the water turn cloudy. Drop in the pasta and cook until it is how you prefer it. If you don’t know how much pasta to cook, go for more, as it stays well in the fridge. Drain pasta.
For the sauce, I use a veggie one from the store. I would recommend looking at how much sugar and sodium are in it though, as there can be too much in my opinion. Just drop the sauce in a pan and turn to low-medium heat. Add fresh veggies. Mushrooms, zucchini, and extra tomatoes is what I usually add. And cook the whole jar, as it will last in the fridge as well. I eat this about 4x a week and only cook once!
That I think would make it for someone who is cooking impaired
